Happy St. Patricks Day from Robin McFalke

This is the North West coast of Ireland. Our ancestors wondered around here. Rob and I got to go visit here last summer. It was an amazing family searching holiday!


This is my dad, Billy Joe McCleskey. Yes he was born in Texas to Irish parents who probably would of named him William Joseph McCleskey (after his grandfathers) if they just plain ol' were not poor southern folk! So green Irish hats off to all of my fun "Smiling Irish Eyes" McCleskey kin! I did get my spririt of entertaining from Billy Joe. He always wanted to have a party and entertain for everyone and it was always sooooooooooooooo yummy! Thanks dad for your contributions to all of us. This song is to you dad ... I remember you singing this ... and I miss you....

Sunny Days are a comin'

Well pretty much this is what I've been doing! Watching the critters in the back and taking their pictures! It was just way to snowy for me to go out and enjoy! However, I have been practicing some skills. Such as knitting and a few ninja skills too!

Burrrrrrrrrrrrrrr Again!!!!

Usually when I wake up in the morning and open my curtains and see this, I think OK .. it is soooo pretty. But COME ON... it's March ... I'm ready to fly kites, not shovel the 3 foot snow boulders the city snow plower left in our driveway entrance!!! Tomorrow, I am just going to go out there an build a snowman. One time Jaime built a snowwoman in the back yard...just for MacKay... (inside joke). You know what though? I am so thankful for my cozy little cottage in the woods. And I did see a rabbit hopping by out of the wood pile a couple of days ago. But, it was getting chassed by a beautiful red-chested hawk... not a hunter. And, I really enjoy feeding the little varments that hang out in the woods. I love to hear the birds songs on a quite snowy day. Oh, and tonight we had an emergcy broadcast across the TV telling us that our county was on a "boil water alert". The water is so nasty anyway to drink... We only drink bottled water as is. But last night we had an ice storm, and then I scooped up a few glasses of snowy-ice and saved them until they melted... and ummmmm it was so good.

opps forgot the recipe ... here it is!!!

Chef Jack’s Corn Chowder
Paula Dean

1 cup (2 sticks) butter
1 small onion, diced
1 small carrot, finely diced
1 small celery stalk, diced
1 clove garlic, minced
1/2 cup all-purpose flour
3 cups white corn kernels, fresh or frozen
3 cups chicken stock
2 cups half-and-half
Pinch freshly grated nutmeg Kosher salt and freshly ground black pepper

Melt 1 stick of butter in a large saucepan over medium heat. Add the onion, carrot, celery, and garlic, and saute for 2 minutes. Add the flour and stir to make a roux. Cook until the roux is lightly browned; set aside to cool to room temperature.
Meanwhile, combine the corn and chicken stock in another saucepan, and bring to a boil. Simmer for 10 minutes. Pour the boiling stock with the corn (a little at a time) into the saucepan with the roux, whisking briskly so it doesn't lump. Return the skillet to the heat and bring to a boil. The mixture should become very thick.
In a small saucepan, gently heat the half-and-half; stir it into the thick corn mixture. Add the nutmeg and salt and pepper, to taste. Just before serving, cut the remaining stick of butter into large chunks. Add it to enrich the soup, stirring until the butter melts

Comfort Food



There it is ummmmm, warm soup!!! This is corn chowder to be exact. Last Wednesday around noon I decided I needed to have some old and new friends over for lunch next day. So, I invited a small but mighty bunch over for some warm soup and company if they felt they could weather the 11 degree snowy day. And guess what? They all showed up! I enjoyed them in my home so much. It is so comforting to have wonderful, kind, talented, smart, beautiful and fun friends! It was a real treat for me.


While on the subject of comfort foods I am totally thinking of mamaws yummy warm tapioca pudding in the big yellow bowl, and Ruth Fortados pound cake. Do you have special comfort foods?

At the beginning of February, Rob and I got to visit Eric and Jaime in Boulder. We had fun seeing how they are living and enjoying their lives. Eric has turned their office closet into his new sound studio. I think if anyone actually reads this blog you will really enjoy taking the time to hook onto their Blog, put on your headphones and listen to Erics latest songs he has wrote and sings. whoooo hooooo Eric. And Jaime, you make some really mean banana pancakes with orange syrup. You and Annie keep everyone walking all day long if Annie had her way. I think I am ready to come back and hike up Iron Flats for at least 1/8th of it !!!

We have been enjoying this great snow for the past week. It has been beautiful here. So, I thought maybe you loved ones sitting around the pools in California there in the sunshine playing your tennis, walking the canal, golfing, or even taking blossom walks are really missing this seasons' visit to us! Oh well, you have missed it and will just have to visit this summer. Please!!!
